Coconut Sweet Potato Curry

This flavorful but simple curry is a great mix of sweet and spicy ingredients. It’s a great example of the variety and intrigue in Burmese cuisine.  Buy local, organic and in-season sweet potatoes for this meal’s centerpiece.  Serve with a salad for s simple but solidarity-filled meal!

Ingredients: 1 Onion, Garlic (3 cloves), 1 tsp Chile or Cayenne Pepper (more if you want a spicier curry), 1 tsp Turmeric, About 1 Tsp. Ginger, 1 Tbsp. Soy Sauce, 1 Can Coconut Milk, Water (same amount as Coconut Milk), Juice from ½ Lemon, 1 Lb. Sweet Potato

Prep Time: 30-45 minutes

Preparation: Peel and chop sweet potatoes. Put all ingredients except sweet potatoes into a large saucepan and bring to boil, stirring occasionally.
Add sweet potatoes to curry and let simmer until they are tender.
